Vitamin B1 What is vitamin B1(Thiamin) ? As soluble one, vitamin B1 is the first vitamin acquired in pure form from vitamin B complex. As the structure of vitamin B1 contains sulfur, the chemical name ‘thiamin’ was given after ‘thi(o+vit)amin’. Thiamin is connected to the nitrogen-contained hexagon ring and the sulfur-contained pentagon ring located in the middle. The chemical combination of carbon in the middle of thiamin and each ring is easily destructed when exposed to heat for long time,and then it makes thiamin lose its functions. In addition, as thiamin is not well stored, the excessive amount of intake will be immediately discharged mainly through urine.
